Have a big bag of carrots in your fridge and don’t know what to do with them? Craving something sweet, and warm and different? You have come to the right place sweet child.

Carrot halwa makes use of the sweetness of carrots and transforms this versatile vegetable into a beautiful and easy to make dessert. Accompany with nuts, ice cream, coconut cream, or eat it plain.

This is a gluten free dessert and can also be made vegan.

  • 1/2 LB Grated Carrots

  • 1/4 Cup Heavy Cream or Coconut Cream

  • 1/4 Cup Brown Sugar

  • 2 TBSP Ghee or Coconut Butter

  • 1/2 TSP Cardamom Powder

  • 1/2 Teaspoon Chilli Powder

  • 1 TBSP Nuts (typically cashews)

  1. Add the grated carrots to a pressure cooker (or instapot) with the cream

  2. Pressure cook with natural release for 1 minute

  3. Turn the instapot to sauté mode on normal and add sugar. Mix until the liquid has gotten thick (around 8 minutes).

  4. Add the ghee (or coconut butter) and keep stirring. Once the mixture feels thicker and the liquid is gone, add the cardamom powder.

  5. Stir in the nuts if you are using them, and serve warm with cream, or any other substitute (good with ice cream!)
